The benefits of matcha in pancakes
Before getting into the kitchen, let's discover together the benefits of matcha in food.
Thanks to its richness in catechins (antioxidants), matcha is an excellent ally for digestion. By promoting the growth of good bacteria, it contributes to the balance of the intestinal microbiota. Due to its high chlorophyll content, it also helps eliminate toxins, reducing bloating and promoting better digestion.
Enough chatter, let's get to the preparation !

- 1 tablespoon of cane sugar
- 1 teaspoon of baking powder
- 1 pinch of salt
- 200ml of milk (vegetable or not)
- 1 egg
- 1 tablespoon of vegetable oil
- 1 teaspoon vanilla extract
Preparation steps
- In a bowl, mix the flour , matcha , sugar, yeast and salt.
- In another bowl, beat the egg with the milk , oil and vanilla.
- Gradually incorporate the liquid mixture into the dry ingredients, whisking until you obtain a smooth, lump-free batter. We recommend using an electric mixer for this step.

How to enjoy these matcha pancakes?
These pancakes pair perfectly with maple syrup or even honey. If you want to add a touch of freshness, add some fresh fruit like blueberries, strawberries, or banana chunks.
For those of you with a sweet tooth, feel free to add a few chocolate chips directly into the dough or simply spread a spoonful of spread on top.
Tips and variations
For a milder flavor, you can substitute maple syrup for the cane sugar. For a gluten-free version , use rice flour or sweet potato flour (it's delicious!).
Now, all that's left is to call your friends to organize the famous Sunday morning brunch and treat your guests. Enjoy!
