What is matcha and why is it so special?
Matcha is a powdered form of green tea, native to Japan. Unlike brewed teas, matcha is consumed whole, providing an exceptional concentration of nutrients. For reference, matcha contains 137 times more antioxidants than green tea.
What nutrients are found in matcha?
Matcha is rich in antioxidants (EGCG), L-theanine (promotes concentration), mild caffeine, chlorophyll (detox), and fiber. It also contains essential vitamins (C, E, K, B1-B6) and minerals like iron, magnesium, and zinc.

How to prepare matcha?
To make a delicious cup of matcha, mix 1/2 teaspoon of powder with a small amount of hot water (about 70-80°C). Whisk with a matcha whisk or frother until smooth and frothy. You can also incorporate it into smoothie or dessert recipes.
Why is matcha so expensive?
You can find cheap matcha online… but it's often of poor quality: dull color, bitter taste, low in nutrients. This type of matcha is usually produced from second or third flush leaves, ground quickly and carelessly, sometimes even outside of Japan.
At Blossom Matcha, we've made a radical choice: to offer you only premium matcha, carefully cultivated in Japan, in the Shizuoka region, renowned for its exceptional terroirs.
Here’s why our matcha is more expensive… and above all, much better:
- It comes only from the first harvest of the year (shincha), the richest in taste and nutrients.
- The plants are shaded for 20 to 30 days to boost the concentration of chlorophyll, L-theanine and antioxidants.
- The leaves are picked by hand, using traditional know-how passed down from generation to generation.
- Only the most tender leaves are kept.
- They are slowly ground using a granite mill to preserve all the qualities of the matcha. It takes 1 hour to produce approximately 40g of matcha powder.
Is matcha bitter?
Not necessarily. Bitterness depends mainly on the quality of the matcha and its preparation. A premium matcha, from the first harvest, grown in the shade and slowly ground with a stone mill, offers a smooth, umami, and velvety flavor, without bitterness.
In contrast, lower-end or culinary matchas (often paler or yellowish) are more bitter, as they come from lower-quality leaves or late harvests.
Tip: For a smooth and pleasant experience, choose a ceremonial matcha and prepare it with water between 70 and 80°C.
